Carrot Ginger Soup

With only 7 ingredients, is the best carrot ginger soup! It's easy, healthy and a delicious mesh of warm winter flavors that boasts many nutritional benefits!

Ingredients

  • 1 oz Oil

  • 1.5 lb Carrots small dice

  • 6 oz Onion small dice

  • 1/4 oz Ginger minced

  • 1.5 qts Vegetable Oil (or Water)

  • 4 oz Potatoes small dice

  • 4 fl oz Coconut milk, full fat

  • As needed Salt

Preparation

Step 1

In a saucepot, add the oil over low heat.


Step 2

Add the carrots and onions. Stir to coat in oil and allow the carrots and onions to sweat until about half-way cooked. Do not let the carrots or onions brown.


Step 3

Add the ginger. Stir and cook until aromatic


Step 4

Add the stock and potatoes. Bring to a boil and reduce to a simmer. Allow the vegetables to become fully tender.


Step 5

Purée the soup with either a food mill or immersion blender.


Step 6

Bring the soup back to a simmer. Add the coconut milk and adjust soup consistency by either reducing or adding more vegetable stock as needed. Season to taste and serve.
